Roast veggie bowl

A nutritious and surprisingly flavoursome roast veggie bowl thanks to the everything bagel seasoning, if it’s not already a staple in your pantry it’s about to be. The sesame fried eggs add a delicious spicy and crunchy kick of yummy and the extra protein is a win too. 

Ingredients:

  • 1 broccoli, chopped
  • 1 cauliflower, chopped
  • 1 sweet potato, chopped
  • extra virgin olive oil
  • 1 tsp cumin
  • 1 tsp curry powder
  • everything bagel seasoning 
  • 4 eggs
  • white sesame seeds
  • black sesame seeds
  • chilli oil
  • 1 spring onion, chopped

Instructions:

    1. Roast the veggies: preheat oven to 220°C. Line a baking sheet with parchment paper. Wash, peel and dice the sweet potato into thumb sized pieces, toss them in a bowl with olive oil, salt, pepper and cumin. Cut up the cauliflower into small florets, add to a separate bowl and toss with coconut oil, salt, pepper and curry powder. Add veggies to a baking tray and place in oven for 25 min or until toasty and golden. Give them a little toss half way through the bake.
    2. Steam the broc: wash and chop the broccoli into bite size florets and steam until cooked.
    3. Fry the eggs: add chilli oil to a hot frying pan, then add the chopped spring onion and sesame seeds. Crack the eggs over the top of the sesame mix and leave on a med heat until eggs are cooked to your liking.
    4. Assemble: once veggies have cooled add them to a bowl sprinkle with everything bagel seasoning a little drizzle of olive oil and toss to coat. Serve with a fried egg

Pro Tip: Make sure your oven is REALLY hot before popping the veggies in and make sure not to over fill your tray. Doing both of these things will make your veggies extra toasted, crispy, golden and yummy.
