Is there anything pistachios can't do? these juicy, sweet and crunchy lamb kofta are so delish. They go perfectly with the refreshing buttery lemon couscous, the perfect hearty meal.
Ingredients:
Kofta:
- 500g lean lamb mince
- 1 tbsp garam masala
- ½ onion, grated
- 1 egg
- ½ cup breadcrumbs
- ¼ cup shelled pistachios, chopped
- 3 sprigs of fresh thyme
- 1 tbsp runny honey
- 2 tbsp olive oil
For the Couscous:
- 1 tbsp butter
- 1 garlic, minced
- 1 cup couscous
- 1.5 cups stock
- 2 tbsp lemon juice
- zest of half a lemon
- Handful parsley, finely diced
- 10 mint leaves, finely diced
- ½ cup greek yoghurt
Instructions:
- Prepare the kofta: In a large bowl, mix the lamb mince with egg, grated onion, breadcrumbs, garam masala with salt and pepper to season. Divide the mixture into large thumb sized pieces. Heat 2 tablespoons of olive oil in a large frying pan over high heat. Add the kofte and cook, turning occasionally, until dark golden all over.
- Make the couscous: add butter to a saucepan over a medium heat, add minced garlic and stir for 1 minute. Add in couscous, stock lemon juice and zest, place the lid over the saucepan and remove from heat and set aside for 15 minutes until couscous is cooked through. Use a fork to fluff up the finished couscous and stir in parsley and mint then season with salt and pepper.
- Finish the kofta: Remove the kofta from the frypan and wipe out any excess oil. Chop the pistachios into small pieces and toss into the frypan over a medium heat for 1 minute, stirring occasionally. Add the kofta back into the pan and toss with honey and thyme.
- To serve: put the fluffed up couscous into serving bowls and top with koftas and greek yogurt.
