These moreish cheesy tacos are stuffed with mexican turkey mince, wrapped in a crispy tortilla, and oozing with melty cheese. If you're in the mood for a quick and delicious meal or snack, then these tacos will not disappoint.
Ingredients:
Turkey mince:
- 500g turkey mince
- 2 shallots, finely diced
- 1 tsp minced garlic
- 1 tbsp olive oil
- 2 tsp minced garlic
- ½ tsp chili powder
- 1 tsp coriander
- 1 tsp salt
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp oregano
- ½ tsp black pepper
- ¼ tsp onion powder
- corn tortillas
- olive oil
- shredded cheddar cheese
- parmesan cheese
- shredded lettuce
- sour cream
Instructions:
- Turkey time: heat olive oil in a pan over medium heat, add shallots and cook for 3 minutes, then add in minced garlic and cook for another minute. Add in turkey mince, breaking up the mince as finely as possible then and in the chili powder, coriander, salt, smoked paprika, cumin, oregano, black pepper, onion powder. Stir through and cook until the beef is browned and crumbled.
- Assemble tacos: heat a separate pan (you’ll want to use a non-stick one) over medium heat with a drizzle of oil, add tortillas to the pan then add some mince on one half and sprinkle with parmesan cheese then cheddar cheese. Go heavy on the cheese so it oozes out the sides and creates a crispy bit on the pan. Fold the tortilla in half and remove from the pan. Open the tortilla back up and fill with shredded lettuce and sour cream.
Pro Tip:
Sprinkle some cheddar cheese in the pan before you add in the tortillas, this will give you and EXTRA crispy, cheesy outer layer.
